Ok, lets skip back for a second… well realistically 20 minutes. Which is how long it takes to get from the airport to the Lobby. Walking through the arrivals gate, amongst the immediate colour, hustle and bustle of Mexico, your greeter stands out. He is dressed in white, holding an IPAD with your title on it. This sets the tone for a ‘diamond resort’ (fyi that’s more than 5*) that has mastered the perfect combination of old Mexico and modern luxury.
The service begins as soon as you step out of the air-conditioned black hummer. Iced water with lemon and today check-in is accompanied by a choice of mango coconut or strawberry coconut icy-polls; made by the resident desert chef.
A priority of a Mr & Mrs Smith style holiday should be to escape the humdrum of everyday life. The gracious style and architecture of this hotel, with its red-tiled roofs and whitewashed walls, nestled amidst swaying palms and a dramatic headland of coastline, transports you instantly.
The resort itself is the expansion of a home built in 1956 for the son of the Mexican president. Over the years it has attracted celebrities and delegates, all seeking the exclusive and private oasis offered.
As well as the anticipated Bose surround sound, terrace day bed, lady primrose bath amenities, tequila and fresh fruit daily, rooms come with a butler and if desired, unpacking of luggage is included (I don’t know about you but I’d rather spend that time in the infinity pool).
Spa services are expensive, very expensive, but that’s what you’d expect from this standard of exceptional luxury. My partner is a big man and no easy feat for a masseuse. He had a custom 90-minute massage, which he declared the best he’d had in his life. Following my facial, spa and steam, I felt clean, glowing and radiant, and hey, what girl doesn’t think that each hydrated wrinkle is money well spent?
Have you worked up an appetite yet? Of course you have! Even the most experienced palates will be impressed with the dining at One & Only.
There are plenty of options; Alfresco at Breeze is romantic and easy. Agua by Larbi presented dishes I would fly back to Mexico for – what I like to call ‘Mexiterranean’ cuisine by award-winning chef Larbi Dahrouch.
Opting to sit outside in a private stone both overlooking the Baja Ocean, comforted with Mexican cushions and a seabreeze, we watched Pelicans and Lizards Sunbake as we sipped an Asai Martini and a Mango and Chilli Mojito.
I opted for two tradition Mexican dishes – Tortilla Soup and then a pulled pork Taco, accompanied by a, um, American Cobb Salad! The dishes were huge, fresh and flawless. The menu was priced in US dollars and what I though was well under value for the quality of food, but I am used to Australian food pricing! You know… we pay $16 for a green salad!
Transition to night and the bar comes alive. When in Mexico… Margarita!
Suviche by Michelin-star Chef Jean-Georges Vongerichten features Euro-Asia cuisine with Mexican ingredients along with the country’s most extensive wine list.
Suviche is a mouth-watering selection of fresh sushi and signature ceviches – if you don’t know what that is don’t Google it just try it.
We found a deeper love. This is his relaxed face, not his cranky face FYI.
If there were a word more than ‘highly’ I’d use it, recommended.
